Yves Roy arrive comme un novice dans le monde du vin. En reconversion professionnelle, il est installé sur son terroir natal à Poligny. Bien entendu il a décidé de travailler le plus naturellement possible. Après un passage chez Valentin Morel pour valider sa formation à Montmorot, il vinifie ses premiers gros volumes cette année. Même s’il avait déjà un peu d’expérience avec quelques canons élaborés pour sa consommation personnelle.

La cuvée Trouillot du domaine Novice est issue de vignes de Chardonnay plantées sur un terroir argilo-calcaire à Poligny. Vendange manuelle, pressurage direct et élevage 10 mois en fûts. Ni collé, ni filtré, sans ajout de sulfites. Le nez de ce vin nous révèle de superbes notes de coing, d'agrumes, de fleurs blanches, de fruits secs avec une touche épicée. La bouche est gourmande et complexe grâce un joli équilibre entre gras et tension minérale. 1733 bouteilles produites.

RETURN

You may return any item that you would not be fully satisfied within 7 days of delivery to receive a full refund. This includes the cost of returning the product.
