La Ferme du Cade est un domaine situé à Saint Laurent dans le Gard détenu par David Teyssier et Vicky Gabarda, ils ont fait une conversion en agriculture biologique en 2014 et leurs premier millésime en 2018 en nature. A la vigne ils n’interviennent pas souvent et favorise un travail léger et utilisent leurs poules et brebis pour s’en occuper. Durant les vinifications elles sont naturelles mais un ajout de SO2 peut être fait à très petite dose. David Teyssier est le régisseur du domaine de Gressac, où il a pu déjà largement exprimer son talent. De ses propres vignes, il tire des jus d'une très grande pureté.

La cuvée Chacun Son Rôle de la Ferme du Cade est issue d'un assemblage de vignes de Grenache et de Syrah plantées sur des sols limoneux et sablonneux en l'an 2000. Macération de 7 jours en grappes entières, avant pressurage et élevage en cuve inox pendant 7 mois. Le nez de ce vin nous révèle de délicieuses notes de mûres fraiches, de cassis, de violettes, de myrtilles avec une pointe d'épices. La bouche est juteuse et croquante avec des tannins fins mais présents. La fraicheur du terroir apporte une très grande buvabilité !

RETURN
